Carrot-zucchini wholegrain bread


I really like bread. A lot. But only the ones that are rich in flavor, with lots of nuts and seeds and more good stuff. I never liked the white bread that doesn't taste interesting to me. It's not something you can truly enjoy while eating. And that's what we should actually do while eating. Enjoying it with all our senses and feeling satisfied and happy afterwards. Thankful for the great and tasty products we are lucky enough to eat every day.

In my opinion, having a good bread with some great toppings, fresh salad, a great spread ... is sometimes better than any other cooked meal. When I was younger we always had a 'Brotzeit' for dinner, which means we had different types of bread, a big plate of veggies, and different spreads and toppings. This is quite common here in Germany.

But let's talk about this bread. It's a special bread, as you can already see from its name. It's a carrot-zucchini bread. I love everything that involves veggies and a bread including them sounds perfect to me! I didn't make this one for a long time, but when I found the recipe on my phone some days ago, I knew I had to make it again! It's very soft on the inside, as the veggies give it a lot of liquidity. So I can recommend you to take more a long baking pan than a high one, so that it can bake evenly on the inside as well. What I like even more, is to form little flat buns. Like that you have a lot of bread crust, which is the best part of the whole bread in my opinion. And you don't have the problem that it might not bake through. It does also only take like 30 minutes to bake in the oven, if you'd like to make a whole loaf, you need to wait a little longer. Of course there are only good things inside, like a lot of nuts and seeds and wholegrain flour. I enjoyed the little buns while they were still warm and topped them with fresh salad and veggies. The carrot-zucchini bread loaf was eaten throughout the week!

Carrot-zucchini wholegrain bread




- 2 cups wholegrain flour

- 1/2 cup water

- 1/2 quarter active yeast

- 1 grated zucchini

- 2 large grated carrots

- 1 cup nuts and seeds

- 1 tsp bread herbs mixture (cilantro, fennel, caraway seed)





1. Dissolve the yeast in the warm water.

2. Grate your carrots and the zucchini and mix it with all the other ingredients through until you get a nice and sticky dough.

3. Sprinkle the dough with a little flour, cover it with a towel and let it sit on a warm place for 30 minutes.

4. In the meantime preheat your oven.

5. Pour the dough in a baking pan or form little buns and bake them on 180 degrees. The bread needs approximately 1 hour, the buns less, like 30 minutes.

6. You can keep those for some days.
