            Chocolate lover overnight oats with rhubarb berry compote

 

I have to admit, I am not a chocolate lover.

Most people can't understand that. But really, I never feel like having a piece of chocolate. From time to time a try some, just because I am curious and I love to try new products.

But most time I give the rest to my sister who enjoys it more than I do.

So I actually never have chocolate oats or something similar, but I got that chocolate lover mix from Your Superfoods. And of course I had to try it!

So I made some overnight oats with it and actually I really enjoyed it!

The chocolate lover mix does not only contain raw cacao powder, but also coconut powder, chia seeds, linseeds and and lucuma powder. In my opinion wonderful superfoods,  which give energy and are very nourishing. This combination is definitely made for lifting your mood and giving you power for the day!

So I really really enjoyed these overnight oats, also because I layered them with a rhubarb berry compote!

I am happy that it's finally rhubarb season and I love that veggie, which is not only good in cakes, but also in compotes! And together with berries very very tasty.

I used frozen berries but of course fresh ones would work as well. Maybe you need a little more lemon juice then. I added only a little coconut sugar, but the berries already give it a great sweetness.

This is a breakfast you can perfectly prepare the evening before and simply take ready out of the fridge the next day. Sounds wonderful to me!

Chocolate lover overnight oats with rhubarb berry compote

(one serving)

 

Ingredients:

 

1/2 cup oats

3 tbsp chia seeds

1 tbsp Your Superfoods Chocolate Lover Mix

1 tsp maple syrup

2/3 cup oat milk

 

3 stems rhubarb

1/2 cup mixed berries

juice of one lemon

1 tsp coconut sugar

 

 

Procedure:

 

1. Mix all the ingredients for the oats in a jar, stir well and place in the fridge overnight.

2. Cut the rhubarb into pieces and place it together with the lemon juice and the coconut sugar in a pan. W

3. When the rhubarb is softened, add the berries. Stir well.

4. Let it simmer for some more time until  everything is well combined.

5. Place it in a bowl and let it cool down.

6. The next day layer the overnight oats with the compote and enjoy!
