Coconut banana bread
Banana bread! When I went vegan and became a part of the vegan Instagram community, everyone talked about banana bread and I saw at least one banana bread a day on my feed. So of course, one of the first vegan things I baked was banana bread! And since then I understood why everyone was talking about it, because the title 'bread' does not really describe what it actually is! It's more a cake ... a really delicious and healthy one! Sweetened through the bananas, soft ... and it goes perfectly with tea or for breakfast.
I tried various banana bread recipes but there were two I liked the most. I should definitely share the other one with you as well, but today I want to present you my number one ... my absolute favorite coconut banana bread!
Yeah I am a big coconut lover and that's probably the reason why this one is my favorite one. This recipe is really easy. It takes you just a few minutes to prepare the dough and the oven does the rest. It's made with half wholegrain flour, half coconut flour, which is very healthy for your digestion. If you like to make this bread gluten free, replace the wholegrain flour by buckwheat flour. This works well too.
The first time I made this bread it was much to dry, so when I made it again I added more bananas and a little more of the milk. And this worked great. The bread became really soft and had a perfect consistency. It was approved by all my room mates, as well as my family.
It is really sort of a cake but I like it most with some coconut yogurt and strawberries on top. I could have this every day! Seriously, this is heavenly. Go and try yourself!
Coconut banana bread
- 1 cup coconut flour
- 1 cup wholegrain flour
- 1/2 cup coconut flakes
- 1 sachet instant yeast
- 3 mashed bananas
- 1 cup almond or coconut milk
- 1 tbsp coconut sugar
- 1 tsp vanilla powder
1. Mash your bananas with a fork.
2. Preheat the oven to 180 degrees.
3. Mix the dry ingredient, later add the soft and liquid ones to the bowl and knead until you get a sticky dough.
4. Place a baking sheet in a baking pan and pour the dough inside.
5. Bake the bread for approximately one hour.
