            Couscous breakfast bowl with berries

 

I am back at uni for the summer semester, but actually my schedule isn't that full and so I have often time in the morning to make myself a nice (and cooked) breakfast.

After the very long holidays it is good to be back on track again.

I also love that it's spring now and that the sun is already shining when I get up for another tough day. I have a great view from my flat, I am looking directly at an opera house with only forest behind and it makes me happy to see how everything slowly starts to become green.

This breakfast is nice for springtime, it is still warming, but with frozen berries inside, which give it a fresh touch.

I actually prefer making couscous sweet over savory and this is a heavenly combination!

I am currently really in love with my rosewater, I love rosewater ice cream and it is great in this porridge as well! But don't use too much, because it has a very strong flavor ... but a great one! Like that, your breakfast will taste a little like a garden of roses!

So I am eating this while watching the world awakening and couldn't imagine anything better right now!

But give yourself a little time, make yourself a cosy morning and make that couscous breakfast bowl!

Couscous breakfast bowl with berries

(one serving)

 

Ingredients:

 

1/2 cup couscous

1 cup boiling water

full fat coconut milk: 2 tbsp solid, 4 tbsp water

1/2 tsp vanilla powder

2 tsp coconut sugar

1/3 tsp salt

1 tsp rose water

peel of 1 lemon

frozen berries for topping

 

Procedure:

 

1. Pour the boiling water over the couscous and let it soak for some minutes. Most of the water should be removed and the couscous should be soft.

2. Now add the couscous together with 2 tbsp of the solid part of a can of coconut milk and 4 of the coconut water to a pot.

3. Add the vanilla, coconut sugar, salt, rosewater and lemon peel and heat everything at medium high heat.

4. Let it simmer until there is almost no liquid in the pot anymore and the coconut butter has melted.  Stir frequently.

5. Bring the couscous to a bowl and top it with frozen berries!
