            Fresh tomato pesto

 

Some dishes would be so boring without any dips and spreads!

For example in the evening I like to eat a plate full of raw veggies, and with some dips this becomes a lot more interesting!

This tomato pesto goes with raw veggies as well as with pasta, on some bread or with my zucchini fritters!

It is super fresh and tastes like caprese salad! But of course it is completely vegan ...!

 

 

 

 

 

 

In this pesto I am using fresh tomatoes and that is the reason why it tastes so wonderful fresh.

Also because of the basil! Basil always tastes like a summer in Italy for me .... please don't be confused by the herbs in the picture ... I used all my basil for the pesto .... ;)

But nevertheless, those are already two ingredients of a caprese salad, but of course in that pesto, there is no cheese inside, but white almond butter! This gives the whole pesto its consistency and a little cheesy taste! Wonderful!

Fresh tomato pesto

(fills one 50 ml glass)

 

Ingredients:

 

3 fresh large tomatoes

leaves of 2 stems basil

1/3 tsp chili flakes

1 garlic clove

3 tbsp white almond butter

1 tsp apple cider vinegar

2 tbsp olive oil

salt to taste

 

 

Procedure:

 

1. Wash the tomatoes and the basil and add together with all the other ingredients to a high speed blender.

2. Blend until everything is well combined.

3. You can store the pesto in a jar in the fridge 3-4 days.
