Mediterranean rice salad bowl

I had some rice leftovers but I wanted salad ...

so what can we do? Making rice salad of course! That was a good idea and a very tasty lunch!

And something different from my normal salads.

This one isn't as fresh as normally because of the dried tomatoes, pickled parika and because of the rice, but it is very nourishing and really delicious!

Sun dried tomatoes always remind me of Italy, olives remind me of Greece and here we go with a mediterranean rice salad bowl!

I remember my mum making rice salad more often when we were younger but hers was a little different.

I added some salad, as I always like to have some greens in my bowl and also parsley, which is one of my favorite ingredients those days. It gives the whole thing a wonderful taste.

So of course there is rice in there, I used brown rice. I added fresh tomatoes, sun dried tomatoes and pickled paprika (sometimes it is really really good to have things like that in stock, they can be life saving when you're running out of fresh veggies), olives, capers and sunflower seeds.

As dressing I liked my herbal lemon dressing, and I was really surprised how much I liked that salad!



Mediterranean rice salad bowl

(makes one serving)




2 hands full mixed salad

1 cup cooked brown rice

5 baby tomatoes

4 sun dried tomatoes

4 pickled paprikas

olives and capers


sunflower seeds

herbal lemon dressing





1. If you haven't already done so, cook the rice.

2. Wash and trim the salad. Add it together with the rice in a bowl.

3. Wash the fresh tomatoes and cut those as well as the sun dried tomatoes and the paprika into small pieces. Add them to the salad bowl.

4. Finish with the olives and capers, the parsley and the sunflower seeds and enjoy with the dressing of your choice!
