Arugula salad with fresh figs


Yesterday I found fresh figs.

For a moment I did only see those beautiful and big figs and forgot everything else. I didn't care about the price or everything else and bought them all! Do you know that feeling, when your brain stops working and everything in you just wants this one thing?

Well in my case this often happens when I see fresh and beautiful veggies and fruits ... could be worse, no?

But those figs made me really happy and they made me a perfect salad!

The first time I had fresh figs, I picked them from the tree. I was on a journey through Italy and Greece with my three best friends. And on a little island in Greece we found that fig tree and , climbed on it and picked figs. Those were my first figs and probably the best figs I ever had.

But sometimes store bought figs can be pretty good as well.




And those were and my salad was pretty good as well.

Figs match perfectly with arugula. I do not have arugula salad very often, but I think I should change that, because it is really really tasty.

Combined with walnuts, sesame seeds, capers and parsley, this salad is quite Mediterranean. You get something like that anywhere in Italy or Greece. Actually we had quite similar salads on our trip. And while enjoying the salad I felt a little thrown back to that time in

Italy and Greece and really wished I could be there again.

Sometimes special tastes and food can bring you back to other places and times, isn't that wonderful?


Arugula salad with fresh figs

(serves one)




3 hand full arugula salad

3 fresh figs

1 hand full walnuts

1 tsp sesame seeds

1 tbsp capers

2 tbsp olive oil

2 tbsp balsamic vinegar

fresh parsley





1. Wash the salad, the figs and the parsley.

2. Dry the arugula salad and place it on a plate.

3. Slice the figs into thin slices.

4. Assemble all the ingredients on your plate and toss with olive oil and balsamic vinegar.
