            Sweet potato-tofu mousse


That gives power! A sweet potato mousse!

Sweet potato is another plant which you can use in 100 different kinds! I truly love that one, I had it on Christmas mashed with a little maple syrup and cinnamon, you can add it to your salad, bake it in the oven or you make a delicious mousse and enjoy it as breakfast, desert or snack.

Sweet potato are full of vitamins, especially vitamin D, C and B, magnesium, beta carotin and iron. They are good for skin, teeth and bones.

They are a healthy source of carbs and perfect to load up your energy sources after a run or a tough day.

This is another mousse you can pack in a jar and take with you when you are on a run. Add some oats and raisins and this jar is so full of health and power.

I had that mousse very often in winter, it was wonderful enjoying that worming breakfast while seeing the snow flakes flying outside the window and feeling all comfortable and warm in the inside. After such a meal you are ready to face every situation!

In there are lots of good and yummy things, of course sweet potato, also some tofu, cinnamon, maple syrup and oat milk. This might sound like the perfect winter treat, but I can enjoy it in every season.

This is also one of the favorite recipes of my room mate. I once made it and she loved it. After that there has always  been sweet potato and tofu in the house, so that we could make that whenever we felt like.

Watch out not to take too much tofu in there, the sweet potato should be the main part. The sweet potato makes this mousse so super creamy and gives it that lovely orange color.

Sweet potato-tofu mousse

(for one jar)




1 medium sweet potato

70g firm tofu

1/3 cup oat milk

2 tbsp maple syrup

1 tbsp cinnamon




1. Cut the sweet potato in half an bake it on a baking sheet in your pre heated oven for ca. 30 minutes on 180 degrees. Remove from the oven and let it cool down.

2. Place it with all the other ingredients in your food processor and pulse until it has reached a creamy consistency.

3. Top it with oats, raisins and almond rasps and enjoy!
