Veggie spaghetti salad with broccoli and lentils


I ordered a spiralizer last year in spring. Some hours after I've ordered it online, my neighbor came over and told me he would have a late birthday present for me. Okay maybe that was really a little late, but who ever regrets a birthday present? And at least that was really nice from him!

And guess what he gifted me? Well, it was a veggie spiralizer! I had ordered exactly the same some hours ago!

Like he would have read my thoughts! I could cancel the order and since then I am spiralizing zucchini, carrots ... and make yummy salads with it!

It's a great and light alternative to common spaghetti and if you eat zucchini spaghetti with pasta sauce I always think it tastes like real pasta.

Maybe not exactly but it is really really good! You can eat the zoodles raw, but you can also steam them.

Most times I have them raw.




This is a spiralized veggie salad like I never had one before. I played around a little with my veggies and came up with this one.

It's raw spiralized carrot and zucchini, steamed broccoli and black lentils. I added spring onion, sunflower seeds, lots of herbs like also chives from the garden. In combination with my herbal lemon dressing this was a fresh and delicious new meal.

This salad is also nice to prepare when you are invited to any kind of summer party. It is not the common leaf salad, but another salad without 'real' salad. A very tasty and interesting combination. It is healthy, fresh and low in fat.

At least my parents and my brother who tried it, liked it and I hope you will like it as well!

Veggie spaghetti salad with broccoli and lentils

(serves 5)




1 large zucchini

2 large carrots

1 broccoli head

1/2 cup beluga lentils + 1 1/2 cups water

1 spring onion

1 hand full sunflower seeds

1 hand full fresh chives, basil and parsley

1/2 tsp salt and pepper




1. Cut the broccoli into small pieces, wash it and cook it in boiling water for approximately 10 minutes.

2. Wash the lentils and put it with the water in another pot and bring it to a boil.

3. In the meantime spiralize the zucchini and carrots, and cut the herbs.

4. When the broccoli is ready, it needs to be a little soft, add it to the bowl with the zucchini and carrot spaghetti.

5. When there is no more water in the pot with the lentils and they are soft as well, add them to the salad.

6. Season with the herbs, salt and pepper and complete with my herbal lemon dressing. Enjoy!
